Sweet potatoes are GREAT!
I recomend making wedges out of them and roasting them. Mmmmm.
Chips made from sweet potatoes are also gorgeous.
Also great in chunks in a curry, or in a mediteranian-style veg mix (with peppers and stuff)

They are also essential in african peanut soup (sounds crap, but very, very good). Saute a large chopped onion with a tablespoon or two of fresh grated ginger, a healthy dose cayanne pepper and some chopped garlic. Throw in a few chopped carrots. Cover with water. Add some chopped sweet potato and a nice veggie soup cube. Simmer until it's all tender then blend it up. Add a cup of tomato juice and a cup of natural peanut butter. Salt and pepper it if needed. Garnish with chopped green onions. Fucking delicious!
